How to make scrumptious Smartie Chocolate Cup Cakes!

These yummy mini sponge cakes take ‘no time’ to prepare from start to finish.

The key ingredient Condensed Milk, delivers a scrumptious moistness and texture to the cupcakes.

It also gives the frosting a soft fudgy texture and a gorgeous sheen.

Always ask permission to cook from a responsible adult and be careful not to burn yourself!  :-)

Ingredients for Smartie Chocolate Cupcakes

Cupcakes

100g (3½oz) plain flour

25g (1oz) cocoa powder

250g (9oz) Condensed Milk

1 egg

½ tsp vanilla extract

85g (3oz) margarine or butter 1½ tsp baking powder

Frosting

200g (7oz) icing sugar

2tbsp cocoa powder

55g (2oz) margarine or butter, softened

few drops vanilla extract

1-2tbsp Condensed Milk

2 boxes Mini Smarties, to finish

You will also need:

12 hole muffin tin and cupcake or muffin cases

Method to make Smartie Chocolate Cupcakes

  1. Preheat the oven to 180°C, (160°C for fan ovens), Gas Mark 4.
  2. Place the flour, cocoa powder, condensed milk, egg, vanilla extract, margarine and baking powder in a bowl and beat with an electric hand mixer for 2-3 minutes until pale and fluffy.
  3. Spoon into the cases and bake for approximately 15-18 minutes until springy to the touch and golden brown. Cool slightly then transfer to a cooling rack to cool completely.
  4. Beat the icing sugar, cocoa powder, butter and vanilla with enough condensed milk to bring the mixture to a soft consistency. Spread or pipe onto the cakes. Decorate with the Smarties.

Tips 

Let your imagination run wild with toppings for your cupcakes – there are loads of great decorations in the shops or chopped nuts, banana chips, curls of chocolate or silver balls!
